Ingredients (Flexible & Forgiving)

Base:

  • ½ cup red masoor dal (Red Lentil Dal washed well)

  • 1 tbsp oil or ghee

  • 1 tsp cumin seeds

  • 1 small onion, finely chopped

  • 1 tsp grated ginger

  • 2 tomatoes, chopped or crushed

Vegetables (Flexible) :

  • 1 small carrot, diced

  • ½ cup bottle gourd (lauki) or pumpkin

  • ½ cup spinach, beans, or zucchini

Spices & Seasoning:

  • ½ tsp turmeric

  • ½ tsp coriander powder

  • Salt to taste

  • Black pepper (optional, for warmth)

Finish:

  • Lemon juice

  • Fresh coriander

How to Make It (Slow & Simple)

Start with the aroma: Heat up some oil or ghee in a pot. Toss in cumin seeds and let them crackle  that scent alone brings a sense of home.

Build the base: Next, add in chopped onion and ginger. Sauté them until they’re soft but not browned. Then, throw in some tomatoes and let them cook down into a lovely, smooth masala.

Let it simmer: Stir in the washed masoor dal, your choice of vegetables, turmeric, coriander powder, salt, and about 3 to 4 cups of water. Let everything bubble away until the dal is tender and the veggies are just right.

Adjust & finish: If you prefer a thicker stew, mash it up a bit. Finally, add a dash of black pepper, a squeeze of lemon juice, and sprinkle with fresh coriander.
